A group of students in the Rancho Mirage High School Culinary Academy of Food Exploration, CAFÉ program, learned from a local dessert favorite.
Chef Ricardo Mondragon with Las Casuelas Terraza in Palm Springs made a stop on Rattler Way to demo a jalapeno marmalade.
The lesson included chopping, the process of carmelization and the art of presentation.
The culinary arts program is lead by Inland Empire native Chef Howard Merrick, a teacher of the arts for more than 2 decades.
